Step 1:
1 C Karo syrup
2/3 C brown sugar, packed
3 egg yolks, beaten & room temperature
Blend together and cook over low heat until thick, stirring constantly.
Step 2:
1/2 C cold water
1 envelope of Knox gelatin
Maple flavoring
1 - 1 1/2 C pecans chopped
Soften gelatin in water and let stand.
After syrup and egg mixture have cooked, add softened gelatin + 2 drops of maple flavoring
Cool in refrigerator until very thick. WATCH!
Add pecans.
Step 3:
3 egg whites, stiffly beaten
1 C of whipped whipping cream (or 1 pint of Cool Whip)
Carefully fold the whipped cream into the egg whites. Next, fold in this mixtue into the the gelatin, maple flavoring, and pecan mixture. When throughly blended, pour into the cooled pie shells.
Chill until set.
This is a marvelous pie; however, it requires that you are not distracted during the preparation - timing is everything. But, the end result will be well worth it! |
