Potato Pancakes

Serving Size:  2 each  Servings:  18 dozen
Cooking Time:  4 minutes for ea. Preptime:  15 minutes
Cooking Temp:  Not Provided Effort:  Easy

 
Ingredients:
2 C peeled & chopped potatoes
4 eggs
2 T melted butter 
3/4 C flour
1 t salt
1/2 C milk 

 
How To Prepare:

Using paper towels, pat potatoes dry. Put eggs in blender and blend for a few seconds. Add butter, flour, salt, and milk. Add potatoes.

Puree until smooth like pancake batter.

Pour onto a greased, hot skillet and cook for 2 minutes on each side.
